Mint Extract

I put together homemade mint extract today from the mint in my garden. Now I have to wait 2 months before I can strain and try it. Mat said I could not buy the cheapest vodka in the plastic bottle, so Absolut it is!

Motorcycle Ride on Highways

This was our first motorcycle ride together going on highways (my bike has reached the up to 60 mph stage of break in), over beautiful bridges, and taking Hecksher along the ocean. Amazing.

Canning Life

Our garden produces so much that I need to can often. Today I made okra pickles for the first time, pickled banana peppers, and habanero hot sauce with the seeds and ribs still intact!

The Dam Tour

We went to see the Hoover Dam on the last day of our trip. We also tried to see the Grand Canyon, but the SkyWalk was closed and people took over the area and wanted to charge ridiculous prices for a tour we weren’t interested in. Anyway, the Hoover Dam was incredible! We took the dam tour, rode the dam elevator to the dam power plant below, and took all the dam pictures we wanted! Yes, we had fun making dam jokes.

We had to come back to Fremont Street to see the giant screen lit up at night. I loved the deck of cards and how they flipped over.

Posturing at the Vegas Sign

So you have to have the story behind these pictures and I suggest you click on them to full view them. They are hilarious!

Mat took me to the Las Vegas sign as I had not been there before. We got in line to wait our turn to take pictures directly in front of the sign – yes, in the 100 degree dry desert heat. You could also line up on the sides and take pictures from the side at an angle, which had shorter lines. We chose the middle. 

We are waiting and line and this group of 6-8 girls get to the front of the side line to the right. They clearly spent all day getting ready for their sign pictures. Long, curled hair, full make up, all wearing sun glasses, their clothes were matching, but not too matchy-matchy – they all had various forms of jumpers on with knots tied at the boobs. 

This group of girls spent at least 30 minutes taking pictures of themselves. A few group pictures, but mainly individual pictures. The exact same individual pictures, taken of the same girl multiple times, of course, after checking her phone to see the first batch of photos taken of her. Their favorite pose was to face the sign (back to camera), hold up a peace sign, and slightly lift their feet, as if they were walking towards the sign with their butt angled out just perfectly?

Now, you have to remember, Mat is waiting in line to take a picture at a sign (obviously for me) and sees this. All of a sudden, he has an interest for me to take his picture at the sign (before the girl gang arrived he said he didn’t want his picture taken at the sign). Mat used his observational learning skills and nailed the pose! Yes, Mat was posed while the girl gang was STILL taking pictures of themselves. He just couldn’t pass up this opportunity. 

If you look closely in one of the photos of me, you can see that I’m laughing so hard my arms are jelly and there is a peace sign from one of the girl gang members in the bottom right corner of the picture. They just couldn’t get enough of themselves. Thanks for the entertainment, ladies! I hope you did more in Vegas than take pictures at a sign.

The Golden Nugget & Fremont Street

Mat took me to Fremont street as I had never seen it before. We also saw the tank in the Golden Nugget. It is a water slide that goes through a tank with sharks and fish!

New York, New York & Hershey’s Chocolate World

I had never seen the New York, New York hotel before so we explored it. I discovered that Hershey’s Chocolate World is inside! There were sooooo many chocolate options, but sadly, on Keto, we purchased the only option for us, unsweetened baking squares. We are going to use it to make Keto peanut butter cups! Yay!

Keto Peanut Butter Cups

Mat was craving peanut butter cups so I made some keto friendly ones (we haven’t cheated on the keto diet since the very beginning of June)! They turned out amazing! Seriously, we ate all 24 of them within 2 days.

I followed these directions and used the ingredients for the filling, but changed the type of sweetener used: 

Low Carb Chocolate Peanut Butter Cups

I used this chocolate recipe for the chocolate shell, but again changed the sweetener:

Chocolate Shell: 

  • 4 oz cocoa butter
  • 1/2 cup cocoa powder
  • 1/3 cup powdered stevia
  • 1 tsp vanilla extract
  • pinch of salt

Peanut Butter Filling:

  • 1/2 cup peanut butter
  • 2 tbsp butter
  • 1/4 cup powdered stevia
  • 1/2 tsp vanilla extract
