Keto Peanut Butter Cups

Mat was craving peanut butter cups so I made some keto friendly ones (we haven’t cheated on the keto diet since the very beginning of June)! They turned out amazing! Seriously, we ate all 24 of them within 2 days.

I followed these directions and used the ingredients for the filling, but changed the type of sweetener used: 

Low Carb Chocolate Peanut Butter Cups

I used this chocolate recipe for the chocolate shell, but again changed the sweetener:

Chocolate Shell: 

  • 4 oz cocoa butter
  • 1/2 cup cocoa powder
  • 1/3 cup powdered stevia
  • 1 tsp vanilla extract
  • pinch of salt

Peanut Butter Filling:

  • 1/2 cup peanut butter
  • 2 tbsp butter
  • 1/4 cup powdered stevia
  • 1/2 tsp vanilla extract
