My Joints Hurt

If you don’t want to hear my rant, please, move on from this post. Last week my right knee started to ache. I had my chiropractor look at it and it felt better. This week the pain has returned. With it came pain in my right wrist. Really bad pain (which is great when you drive a motorcycle everyday – I’m sure that doesn’t help). Then tonight my left knee and left wrist started hurting ever so slightly. So now I’m falling apart and spent hours on Amazon finding the perfect Collagen Peptides, which should be here in 5-8 business days (because I’m terribly cheap and refuse to pay for shipping). I think this is a result of the Keto diet, which I’m not thrilled about. But then again I’ve been on the Keto diet for 4 straight months now, so maybe it’s something else. That’s all. Typing sucks. 


Reducing Emissions

In an effort to reduce our emissions to help the planet, my husband bought us a pair of GSXR motorcycles. We also had a mid-size truck and an SUV. Ever since I was given the motorcycle, I have taken it to work nearly every day (I maybe took the SUV once every other week). My motorcycle gets about 77 mpg! Seriously, how amazing is that. I reduce my emissions, help save the planet, save money, and get to drive a super fun motorcycle. This past Saturday we decided to kick it up a notch. To further entice us to take the motorcycles when we are out together (think movies, restaurants, etc.) we sold the SUV. Now our main mode of transportation are motorcycles with a back up mid-size truck (gets almost as good of gas mileage as the SUV did) for things like hauling supplies, getting groceries, driving when it’s raining and desiring to stay dry, etc. It’s terrifying and exciting all at the same time. As a bonus, our bills are going down (insurance, tabs, maintenance, cleaning). And my husband is an absolute sweetheart and is paying off my student loan (that’s another topic in itself) with the money from the sale, plus his personal stash. Excited to be rid of all debt and help the planet! 


X Challenge

Happy Birthday, Mat!

We had spiced whoopie pies at midnight of Mat’s Birthday. On the day we celebrated with special Birthday breakfast (fried cheesy eggs, bacon, and sausage), presents & cards, Birthday tacos, cupcakes, and a walk on the beach. 


Programmer’s Pizza Party!

We made homemade pizza as a late celebration for Programmer’s Day! Best keto pizza ever! I’m proud of my Programmer! 


Canning Life

Our garden produces so much that I need to can often. Today I made okra pickles for the first time, pickled banana peppers, and habanero hot sauce with the seeds and ribs still intact!


Keto Peanut Butter Cups

Mat was craving peanut butter cups so I made some keto friendly ones (we haven’t cheated on the keto diet since the very beginning of June)! They turned out amazing! Seriously, we ate all 24 of them within 2 days.

Here is the recipe: 

I followed these directions and used the ingredients for the filling, but changed the type of sweetener used: 

Low Carb Chocolate Peanut Butter Cups

I used this chocolate recipe for the chocolate shell, but again changed the sweetener:

Chocolate Shell: 

  • 4 oz cocoa butter
  • 1/2 cup cocoa powder
  • 1/3 cup powdered stevia
  • 1 tsp vanilla extract
  • pinch of salt

Peanut Butter Filling:

  • 1/2 cup peanut butter
  • 2 tbsp butter
  • 1/4 cup powdered stevia
  • 1/2 tsp vanilla extract

Why did the Turtle cross the Road?

To give Star a heart attack, that’s why. Mat and I went for a walk on a wooded trail near our house. We saw skinks (a type of lizzard), giant grasshoppers, crabs, and many many flies. At the end of our walk we spotted this guy in the grass/rocks between the parking lot and the road. We watched him for a while, making sure he wasn’t headed for the road. Once we were certain he would behave, we got in our vehicle. As we are coming up to the road, who do you think we see? Of course, Mr. Turtle. And yes, he was in the road (he had crossed almost the whole street already). We shooed him off the side of the road for good measure. 


Look at this little guy

We found him on our patio. We watched him before he slithered away into the grass.


Habanero Hot Sauce

Mat wanted to name this “Star’s Dimples.” I wrote “X-Mas Tree” on the jars I sold to a co-worker. It’s pretty hot stuff!
